Our culinary team crafts everything in-house with locally sourced ingredients, from small plates and artisanal cheese boards to house-made pastas and charcoal-fired entrées prepared on a rare Josper Charcoal Grill.

Clint grew up on a cattle ranch in Archer County, Texas, where early days working with his hands helped shape his practical, grounded approach to life. He earned his bachelor’s degree in psychology from the University of Texas at Austin in 1999, and it was during those college years, thanks in part to the writing of John Fante, that he fell in love with wine. Over the next 15 years, Clint built a career in the foodservice industry while also exploring other passions, including earning a master’s degree in liberal studies from UNC Wilmington in 2020. He spent six years in education as a teacher and tutor, and continues to be a lifelong learner with a deep love of reading, especially nonfiction, classic, and postmodern literature. Clint lives in Ballantyne with his wife Vanessa, a watercolor painter, and her two children. When he's not exploring wines, particularly those from Beaujolais and the Loire Valley, he enjoys yoga, meditation, and fixing things around the house, always finding time to stay active and curious.
When cooking, he draws on experiences that began with his roots in East Texas, which he calls one of the best melting pots of cuisine in the country. After circumnavigating the globe in the United States Navy, it was seeing how food brought people together, transcending cultural and language barriers, that led to a passion for the food and hospitality industry. For over a decade he worked in the front-of-house, with some intermittent stints in kitchens, then seriously committed to his passion of cooking by attending Le Cordon Bleu in Austin, TX in 2014. Having cooked in San Diego, Austin, and New York City, he has spent several years cutting his teeth in the Charlotte culinary scene. He is thrilled to join Foxcroft Waverly and see what kind of Mediterranean inspired fare he and his team can create!
Jackie, also known as JL, was born in the Midwest and first came to Charlotte in 2017 to work on the Camp North End project. She holds a bachelor's degree from Williams College and a master's from HEC Paris, along with certifications in WSET II and as a Sake Advisor. Before joining Foxcroft Waverly, she worked in the perfume industry, where she had the opportunity to collaborate with farmers growing fragrant flowers. Her love of history, storytelling, and cultural exchange has shaped her path in hospitality, where she focuses on creating thoughtful, memorable experiences.

Will spent his childhood cooking in the family kitchen with his mom and cooking and baking with his grandmothers. His culinary journey was always centered on cooking meals for friends, family, and loved ones and how his food brings people together. Will followed his passion for cooking to Johnson and Wales University where he earned both AS and BS degrees in Culinary Science graduating in 2017. Will's mission at Foxcroft Wine Co. Waverly was to simply cook and create exceptional dining experiences for guests. He appreciated their trust and confidence in the Foxcroft Culinary brand and worked diligently to uphold the high standards set by all Foxcroft locations. In November of 2023, Will suddenly and tragically passed away due to a blood clot. We are devastated by the loss of a talented and wonderful chef and friend.
The Chef William-Allen Peterson Culinary Arts Foundation honors Chef Will’s enduring legacy by empowering aspiring young culinarians through scholarships, education, equipment, and training. We nurture secondary and post-secondary school culinary arts talent in underrepresented communities, transforming passionate individuals into the next generation of culinary arts & sciences specialists and professional chefs.
