WAVERLY | Traditional and Modern Spain

Traditional and Modern Spain

Wine Dinner

The pull of tradition is strong in Spain, with hundreds of years of history establishing classic regions and wine styles. But the landscape of Spanish Wine has changed dramatically over the last 25 years, and the tensions of tradition vs. modern techniques have produced some truly unique and delicious results.

For this dinner, we’ll taste 8 total wines, 2 with each course, on four different themes. With each course, one wine will represent the “traditional” style and set of techniques, while the other will display a modern take on a particular grape or regional style. We’ll vote as a group on which version is the winner for the course and the evening.

Chef Will Peterson and team will present a 4-course Spanish-inspired menu with a few modern takes on classic regional dishes.
